How I discovered these healthy desserts
As some of you know, I had a really difficult second pregnancy. What they say is true, every pregnancy is different. With my first, not that much nausea. No complications. Easy breezy. With my second pregnancy I ended up with gestational diabetes during and preeclampsia after! When I was diagnosed with gestational diabetes, besides having to prick my finger three times a day and write down everything I ate for two weeks, I also had to completely revamp my diet. But foodie that I am, I could not live on food that didn’t taste good. I have a major sweet tooth, but I couldn’t have regular desserts without my blood sugar paying the price. So, I went on a deep dive to hunt down the most tasty healthy desserts and carb treats.
What healthy desserts are out there
I tried everything from almond flour cookie dough to black bean brownies. Did you know they make pancakes and pasta out of chickpea flour? I found some great things and some not so great things. Of the many, many things I tried, these were by far the tastiest healthy desserts I came across. You won’t believe they’re actually healthy!
Compare the nutrition facts of these healthy desserts to a typical brownie mix
I was amazed with how little they had of the stuff I had to limit:
14g carbs, 8g sugar
And impressed that they had some of the good stuff too:
2g fiber, 3g protein
To give you a reference point, consider the nutritional info of your typical brownie:
28g carbs, 21g sugar
1g fiber, 1g protein
So Simple Mills has half of the carbs and sugar than your typical brownie mix plus more fiber and more protein. And did I mention you won’t even be able to tell that they are healthy?! Win win win all around.
A true unicorn: the healthy desserts that actually taste like a treat
Seriously, I’m so happy with these healthy desserts! Makes me hopeful to find more healthy desserts that actually taste like treats. hoorah! Do you have any easy (read: packaged) go to healthy desserts? I’d seriously LOVE to know.
*Between the cake, the muffins and the brownies you can make from the recipes on the back of the package, my favorite are the brownies. I add a bunch of toasted pecans for extra texture and more healthy fats and protein.
