Don’t you just love recipes you can whip together without measuring? This recipe was given to me by my sister-in-law who used to be a personal chef and has co-authored a recipe book. I get the most genius recipes from her including this go to quick breakfast. This salad is easy, quick, and healthy. I don’t think it gets much healthier than eating beans with vegetables! I love eating it with salmon on top or any grilled or fried fish. I think the lemon in the salad really shines when topped with fish. As far as measurements, you can’t go wrong. Just season to taste!
Baby Kale ( Use entire tub since it wilts)
Spoonful of Oil (I use avocado)
Minced garlic (eyeball about 1 or 2 teaspoons)
Salt (to taste)
Pepper (to taste)
Sliced black olives (handful)
Canned garbanzo beans (rinsed about a handful)
Lemon (maybe half)
Heat up oil on medium and add minced garlic. Flash cook baby kale for a couple minutes- don’t overcook (some pieces should be wilted, some should not). Remove from heat and squeeze lemon, sprinkle salt and pepper to taste and toss in garbanzo beans and black olives. Done!
Now I’m getting hungry! I love a good bean salad that takes literally 5 minutes to make tops.
