Whether it’s at a restaurant or another recipe I try at home, I am always thinking I should have just stuck to this beloved crustless quiche recipe instead of trying another.
15 + years ago someone gave me this recipe
You guys, I crave this recipe often. It has been with me since college days when I was working at an acupuncturist’s clinic located in a historic home in Fort Worth, TX. Across the street was a lovely bed and breakfast.
One day we went across the street for a brunch at the bed and breakfast, and I inhaled these mini crust-less quiches. The owner of the bed and breakfast offered to give me the recipe! Of coursed I sprang on it!
What makes this recipe so special?
It’s gotta be the combination of zesty but not spicy green chilies that pairs wonderfully with Monterey Jack cheese. The secret ingredient is cottage cheese- to make sure the whole thing isn’t dry.
Different additions
Every time I make this quiche I add different veggies or meat. Since the 15 + years that I’ve had this recipe, I’ve tried it with everything. I’ve tried it with
- cubed ham
- breakfast sausage
- broccoli
- asparagus
- bell pepper
- spinach

Ingredients:
- 10 eggs-beat till fluffy
- 1/2 c flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 pint undrained cottage cheese
- 1 pound grated Monterrey jack cheese
- 2 small cans chopped green chilies
- 1/2 cup butter or salad oil
Instructions:
1. Preheat oven to 350.
2. Mix dry ingredients first and add to wet ingredients.
3. Place ingredients in silicone mini muffin holders or a large oven proof baking dish and bake for 30 min for mini muffins or 1 hour for large baking dish. (no need to spray pan with oil)
*yield- approx. 48 mini muffins
